Purple Pizza: In Love With Eggplant

Raise your hand if you love pizza! As you might have guessed by now, we do have a normal ordinary life when we are not travelling and exploring new things. And one of the greatest joys of this everyday life is eating – and sometimes cooking. Here’s a recipe for a tasty purple pizza that works for anyone who tries to be healthy and/or vegetarian. Cheese lovers won’t be disappointed either.

Eggplant Pizza: Ingredients

  • 1 eggplant
  • 1 red onion
  • A few mushrooms
  • 1 tomato
  • Cheese

This makes approximately 8 small pizzas. All you need to do is slice all the ingredients and pile them on each other. Pre-heat the oven and once it’s warm enough you put your pizzas on a tray and into the oven they go. They are ready once the cheese has melted. Serve with a salad or something more substantial like meatballs. One of the benefits (apart from the actual health benefits) with this dish is that it’s incredibly quick to make – the delivery guy will not have the pizza at your door any quicker than making this dish.

Eggplant is actually good for you, so it might be a good idea to swap your normal pizza for these little snacks once in a while.
