You know the feeling when you’re feeling too tired to cook but the best thing would be a home-cooked meal? The first time I heard about one-pot pasta was a few months ago, and I have been curious about it ever since. A few days ago I decided that it was about time to try this quick (and hopefully tasty) option. As I wanted to try Pasta Chicken Alfredo (with spaghetti), it wasn’t a particularly healthy alternative, though. It is, however, the perfect comfort food. This recipe (in Swedish) inspired me.

One-Pot Pasta Chicken Alfredo: What You Need For 4 Servings

  • 1 grilled chicken
  • 1 leek
  • 3 garlic cloves
  • Butter
  • 5 dl cream
  • 3 dl water
  • Chicken stock (I used vegetable stock)
  • 300 g spaghetti
  • salt and pepper
  • Fresh spinach (70 g)
  • Parmesan cheese

One-Pot Pasta Chicken Alfredo: How You Make It

The beauty of one-pot pasta is that you toss everything in a saucepan and then you just need to wait. Here are the few steps for making this delicious dish:

  1. Fry the garlic and the leek in butter, in the saucepan. Add cream and water, throw in the stock cube and put the pasta into the mix. Let it all boil together for about 8 minutes. Add some salt and pepper.

2. When the pasta is ready, it’s time to add the spinach and the parmesan. Stir, place on a plate and serve!

I really enjoyed making this dish because it was so easy. Furthermore, it tasted delicious. It was also a practical meal to have in the lunchbox at work for the next day. As I’m a lover of all things spicy, this dish could have had a bit more sting to it. However, because of the simplicity, I will definitely make one-pot pasta again soon!
